MARINATED BOER(CHEVON)




1/2kg Chevon-- sliced
2 teaspoons Soy sauce -- dark
2 teaspoons vinegar
1 teaspoon Ginger ; blended fine
1 teaspoon Cornstarch
1 teaspoon Sesame oil
4 teaspoon corn oil
2 Red chilies -- dried halved

Seasoning:
1/2 teaspoon peppercorns
2 teaspoons Soy sauce -- dark
1 teaspoon Oyster sauce
1 teaspoon Chilli sauce
1/4 teaspoon Salt
1 teaspoon Sugar
1/2 teaspoon Sesame oil


Methods/steps

Combine chevon with marinade; let stand 30 min
Heat oil in a wok
skillet until very hot
Remove chevon from marinade and add to oil; stir-fry
until brown (about 3-4 min)
Remove and drain
Remove all but 1 Tbs oil,
reheat oil and add chili peppers; stir-fry 10 sec
Add lamb and seasonings
Stir-fry 4 min, mixing well
Serve at once

Lemongrass essential oil information

Our lemongrass essential oil is extracted from Cymbopogon citratus (also known as Andropogon citratus, A. schoenathus - West Indian, Madagascar or Guatemala lemongrass; Andropogon flexuosus, Cymbopogon flexuosus - East Indian, Cochin, British India or native lemongrass), of the Poaceae family.



It is a fresh smelling oil that can be used with success for fighting jet lag, cellulite, revitalizing a tired body and mind, as well as keeping the family pet free of fleas and ticks.

Oil properties
Lemongrass oil has a lemony, sweet smell and is dark yellow to amber and reddish in color, with a watery viscosity.

Extraction
Lemongrass oil is extracted from the fresh or partly dried leaves by steam distillation.

Chemical composition
The main chemical components of lemongrass oil are myrcene, citronellal, geranyl acetate, nerol, geraniol, neral and traces of limonene and citral.

Precautions
Lemongrass oil can irritate a sensitive skin, so care should be taken. It should be avoided in pregnancy, due to it being a possible skin irritant.

Therapeutic properties
The therapeutic properties of lemongrass oil are analgesic, anti-depressant, antimicrobial. antipyretic, antiseptic, astringent, bactericidal, carminative, deodorant, diuretic, febrifuge, fungicidal, galactagogue, insecticidal, nervine, nervous system sedative and tonic.



Uses
Lemongrass oil revitalizes the body and relieves the symptoms of jetlag, clears headaches and helps to combat nervous exhaustion and stress-related conditions.

It is a great overall tonic for the body and it boosts the parasympathetic nervous system, which is a boon when recovering from illness, as it also stimulates glandular secretions.

It is useful with respiratory infections such as sore throats, laryngitis and fever and helps prevent spreading of infectious diseases. It is helpful with colitis, indigestion and gastro-enteritis.

Lemongrass oil helps tone the muscles and tissue, relieves muscle pains by making the muscle more supple. It helps with correcting poor circulation and as an insect repellant. It helps to keep pets clean of fleas, ticks and lice.

LEMONGRASS RECIPE ver 1.11

NASI KERABU

OVERVIEW:

Nasi means cooked rice, and kerabu means vegetable mixture, so this dish means herbed rice salad. It's very good, and would make a nice dish for a potluck or a picnic.




INGREDIENTS:

* 5 tenggiri steaks
* 1kg rice

Ulam to cook with rice:

* 2 turmeric leaves
* 2 torch ginger leaves
* 2 stalks daun kesum
* 2 cekur leaves
* 2 na dam leaves
* 2 daun kentut
* 2 daun kudu
* 2 stalks curry leaves
* 2cm fresh turmeric
* 2 stalks FRESHCUT lemon grass
* (You can omit or add the ulam listed subject to availability)
* 2 pandanus leaves
* 3 kaffir lime leaves
* 2 tablespoon palm sugar

Garnishing:

* 1 cucumber, pared and julienned
* 1 onion, finely sliced
* 15 stalks of polygonum leaves, finely cut
* 10 long beans, finely sliced
* 1 bunga kantan, finely cut
* 3 stalks of lemongrass, finely sliced

Fried grated coconut:

* 1/2 a coconut, finely grated
* 8 shallots, finely sliced
* 2cm ginger, sliced
* Palm sugar and salt to taste

Sambal Belacan:

* 15 chillies
* 5 shallots
* 3 cloves of garlic
* Budu
* 4 bird’s eye chilli
* Lime juice, to taste
* Fish crackers



PREPARATIONS:

Slice all the ulam leaves and either blend or pound finely. Add 2 glasses water to leaves and extract the juice. Sieve and repeat with another glass of water.

Wash rice. Add ulam juice to the rice. Add three pieces of pandan leaves and kaffir lime leaves, and 1/2 a block of palm sugar. Cook in a rice cooker.

Rub some salt on the fish and grill over a low fire. When cooked, let it cool and then break into flakes.

Dry fry the grated coconut with sliced shallots, ginger, palm sugar and salt over a low fire. When the mixture turns fragrant, lightly flatten the grated coconut with the back of your spatula.

Dry fry belacan with shallots and garlic over a low fire until fragrant. Blend this mixture with chilli to make the sambal belacan.

Mix some budu with limau kerat lintang and bird’s eye chilli.

Serve the rice with the grilled fish, finely sliced garnishings, sambal belacan, budu and fish crackers.

LEMONGRASS RECIPE ver1.10

Salmon with Sesame and Lemon Grass


It's best to use the tender inner part of the lemon grass stalks. The outer stalk is quite tough. Just slice the lemon grass in half lengthwise and pull out the lighter-coloured interior part of the stalk.



Ingredients:


Salmon

* 2 tbsp grated lemon grass
* 2 tbsp chopped ginger
* 2 tbsp toasted cracked coriander, seeds
* 4 x 6 oz salmon, fillets, skin on
* coarse salt and pepper
* 1 tbsp olive oil

Pan Sauce

* 2 tbsp toasted sesame oil
* 1 clove garlic, minced
* 1 tsp minced lemon grass
* 1 tsp ginger
* 2 tbsp lemon juice
* 1 tbsp soy sauce


Directions:
Salmon

1. Preheat oven to 375 F.
2. In a small bowl, combine the lemon grass, ginger and coriander seeds.
3. Sprinkle salmon with salt and pepper.
4. Press spices into flesh side of salmon.
5. In a large ovenproof skillet, heat the olive oil until shimmering.
6. Place the salmon, flesh side down, in the pan and cook for 2 minutes.
7. Flip salmon over and put it in the oven. Roast until the skin is browned and the salmon is cooked through, about 8 to 10 minutes.
8. Remove it from the oven and transfer it to a platter.

Pan Sauce

1. Whisk the sesame oil into the pan, along with the garlic, lemon grass, ginger, lemon juice and soy sauce.
2. Serve with the salmon.
